:: coconut butter & all it's possiblities ::

There is nothing simpler than making a batch of cocot butter. 

You need:

1 bag of shredded coconut. the end.

Wizz it in your food processor until it turns to liquid. This will take about 3 minutes in a Thermomix or 15 mins in a food processor. I should mention that I used a 500g bag of coconut. Anything smaller might be a problem.

pour into icecube moulds.





These white delights are not only good for spreading on toast (you'd have to warm it up first) but are VERY good just on their own. You wouldn't believe how good one, unsweetened ingredient can taste.

I had about exactly a cup of coconut butter left over once I'd  filled an  icecube tray, so I mixed 1/4 cup cacao powder and 2 Tablespoons of rice malt syrup with the rest. I attempted to pipe it but being so cold that day, it was turning into a rock as I went. So the piping wasn't a pretty success, but it was a tasty success! They came out like mini coconut-rough bites, and they are ADDICTIVE!! So good. I was glad I only made them into such small dots because I polished off about a dozen right then and there.

Coconut butter can actually be used to make a lot more glamourous looking treats, which I can't wait to attempt. It's really quite a facinating and versatile discovery for me!

  1. That was one of the most fun things I've done in the kitchen recently. Turning dessicated coconut into a liquid in about 2 min. I then mixed coconut cream, vanilla & rice malt syrup.They weren't so hard then.

  2. Yummy!!!! I make coconut butter all the time & use it for icing on cakes with different flavours, but I love these little coconut rough balls :)I think this will be a hit in the lunch boxes this week

    1. Cake icing, that's a good idea! Do you add anything to it to keep it soft? Or do I just have to be in Qld? ;)

  3. Ok I definitely have to try this... I remember reading about it in the book and thinking YUM!!! So it would have to be safe for week 3 wouldn't it? Without the rice malt syrup and cacao? (looking forward to the coconut roughs in week 6 already!!)

    1. Yep, it is safe for Week 3! But beware! Very addictive and though its a good fat, you will still put some weight back on if you eat a whole bag of coconut within a couple of days *ahem, whoops*!
