It's sad because I know you all will have no trouble believing me (so there's no use saying "You won't believe...!") when I say
I'M EXCITED ABOUT THIS ONE!!!!!
Last night, I made the chocolate pudding.
It doesn't taste remotely healthy.
It is so crazy RICH.
And Jason says it's now it's his favourite. The male seal of approval - YES!
Now for the key ingredient. Definitely the secret ingredient.
.avocado.
Yes!! So it's pumped full of good fats and you would NEVER TELL. I swear, I wasn't sure if it was going to work but when I tasted it, I groaned audibly for a good long while. And repeated to Jason over and over, that I'd finally hit the jackpot/this is it/wait till you try this/I've reached the epitome of my find-a-healthy-way-to-eat-naughty career.
It honest-to-johnson tastes like a dairy-based, sugary, full of melted-chocolate dessert.
If you don't mind the nuts, I would say most definitely include the tablespoon of peanut butter. Jason said it was his favourite thing about it. I thought it quite subtle, but it did give the whole pudding a rounder taste, similar to if there was such a thing as Snickers Mousse or something like that. I'm not always a nut/chocolate fan, but this was perfect.
If you come to visit, I will make this for you. I promise it is not to miss.
:)
Love me x

Best Chocolate Pudding Ever
(adapted from Oh She Glows)
Ingredients
- 2 cups very ripe avocado flesh (approx 3 medium avocados, I only needed 2), pitted and scooped out
- 1/3 cup non-dairy milk
- 1/3 cup pure maple syrup
- 1 tbsp smooth peanut butter (or omit for nut free)
- 1 tbsp arrowroot powder (thickener, probably optional)
- 1/4 tsp salt
- 1 tsp pure vanilla extract
- 1/4 cup cocoa powder, sifted
Instructions
- 1. Place all ingredients into food processor. Wizz till smooth. Enough for 2 "wow" after-dinner desserts.
If you come to visit, I will make this for you. I promise it is not to miss.
