::not your average lasagne::

{sausage potato lasagne}

Husband dear has been wanting me to make this tomato-less lasagne for a while now. In case you didn't know, he prefers it if I steer around tomatos cooked up in anything; fresh in salads being ok. Yes, that also means I have never cooked spagetti bolognaise for him even once.
Not that he can pass up my mother's one.

It was a good thing I made it on a Saturday, because nearly 1.5hrs later it got in the oven.
Pretty fiddley. I had pretty much decided it was one of those things you make once. But after dinner, I'm not so sure.

It was wonderful.


The full recipe can be found here, so I won't spell the amounts out.. just show the rough step-by-step.

I started by squishing 500g of herby sausages out of their skins, and frying them up with a few cups of mushrooms (below).


 Next, slice 8 medium potatoes as thin as you possibly can. Put them in a saucepan with cold water and once it finally gets to boiling, only boil for 5 mins or so because you don't want them fully cooked.


While the potatoes are cooking, mix 1/2 a cup of Parmesan cheese, 2 eggs and about 500g cottage cheese...


then chop & cook a whopping great bunch of spinach (they said use frozen, but I had fresh in the fridge, so..). You will need to use a lot of fresh because.....


...it really cooks down! 


(by now the 5 mins of potato boiling should be over, so make sure you drain the potatoes so they don't keep cooking).

OH! I didn't take a photo of another step. You need to make a white sauce, starting with frying some onion & garlic, adding some flour, then 3 cups of milk and letting it simmer till thick.

Mix the spinach with the cottage cheese mixture and start your layering!


So I went:
~ potatoes
~ spinach/cottage cheese mix
~ meat/mushroom mix
~ white sauce
~ potato
~ spinach
~meat
~ white sauce
~ potato
~ mozzarella cheese on top.


I had a bit of left over white sauce so I put it on the tippy top.
Also, I made double the recipe, so I came away with two!


I covered them with foil for cooking, and then I only added the mozzarella 15mins before it was due to come out of the oven, so that it
would brown nicely (and not burn like it usually does for me!)

All up, I had it in the oven for about 50mins.


It honestly tasted that good.
The people we had for dinner that night asked for the recipe of course ;).

    Can you change time zones please lol ?!?!

    Chris would LOVE this ... lasagna is how i won his heart over ;)
